Middle Earth low diffs this. The best the GoT can accomplish with Dragons and weaponry seem to be small building/Building level feats at best, and the 300-verse is capable of even less, whereas high tier magic users of the Tolkienverse are easily town level via scaling from the War of Wrath.

The Spartans would need a tight crammed spot for them to burrow down in and defend in order to get results like they did in the Movie 300. By putting them in an open field you negate any sort of advantage they could've had.

Well, even when Sauron had the ring, he was defeated by a mere Range. Due to the overwhelming difference in size of the armies above, someone should find the time to repeat the feat. Also, Sauron should be more powerful than Durins Bane, the Wizards and even Smaug by default, if he can fall victim to numbers, than so can they. The 3 Dragons from GoT would likely gang up on Smaug.

Let's not forget about the White Walkers. They can only be defeated by Dragons and instantly destroy any human weapon. Smaug would be the best and only hope that Lord of the Rings has when it comes to them. Can he take out 100,000 White Walkers while fighting several smaller Dragons? It's difficult to say.

Than you've got the armies of Sparta, Immortals & Persians encircling everybody and attacking them.

Sauron's defeat was due to him putting all his power into the One Ring, effectively making him a glass cannon. This is supported by far weaker characters performing City to Mountain level feats in the books (Gandalf splitting the side of the mountain when fighting Durin's Bane, as well as both Saruman and Aragorn having confidence in Saruman's ability to bring down an entire mountain). Those two wizards were also capable of enduring each other's magic. Along with this, Sauron was also able to maintain the entirety of Barad-dur just by existing.
The 3 Dragons would still do nothing to Smaug as evidenced by the durability difference between them. Smaug's body is impenetrable (by Middle Earth standards at least), save for one weak point, whereas Drogon was pierced by multiple spears. Not just that, but the feats and scaling for Smaug vastly outclass even the combined power of Daenerys' dragons, enough that even the whole White Walker army shouldn't be a match for him. It's even possible that Gandalf or Saruman's magic may be capable of doing something to them, as it far outclasses that of GoT magic users.

Not only that, but George R.R. Martin himself confirmed that most of the characters in the series would lose to comparable Tolkien characters, never mind those that are far above their level.
