Superman can be confusing, so I'm limiting this to the Superman who fought and died against Doomsday in the 90's.

Post-Crisis Superman in general should be Solar System level from his feats, so this would be about even in power for Manga Boo, though he'd easily win due to his far superior speed and vast array of abilities to counter Boo's regeneration.
If it's Anime Boom on the other hand, he gets Galaxy level scaling from M12 Goku shaking Other World with his SS3 transformation as well as speed feats arguably more impressive than Superman's best from getting scaling from Goku and Paikuhan flying from Dai Kaio's planet to Hell in little time and the general rule that combat speed >>> travel speed in DB, so Anime Boo oneshots.

Superman outclasses Gohan Buu in all respects, strength, speed, skill and powers. This is the equivalent of a toddler fighting a grown adult.
