I think there's a cool way of determining how much stronger Goku got by training with Karin. Just look at Uranai Saga Baba:
Mummy was probably stronger than 21st Budokai Goku, given that Roshi said that Goku probably could not win. Placing Mummy at Goku (vs Blue) level seems accurate.
Goku (initial power) was able to one-shot Mummy, implying at least a 1.5x difference, not to mention get away just fine from all of his attacks.
Akkuman was confident in take out this Goku, implying he also could one-shot Mummy, but he seemed respect Goku's initial power, having a serious look on his face. Based on this, Goku (initial) ~ Akkuman.
Even so, Goku started to handle Akkuman without problems, implying he increased his level of effort to fight him. This Goku, though, had problems dodging Akkuman's weapon.
Goku, so, used his full power, hitting Akkuman with all he had got. Akkuman was one-shotted by full-power Goku and could not even see him, implying at least a 1.5x gap. So, we have:
Goku (full power/finishing Akkuman) >= Son Gohan >>> Son Goku (vs Akkuman) >> Akkuman >= Goku (initial) >>> Mummy ~ Goku (vs Blue/pre Karin training) > 21st Budokai Goku >= Roshi.
