It's shown in the fight against Ado that Guts could easily cut through iron, cutting Ado's brother iron ball and armor easily. That'd put [age 18] Guts at least at [post Mr. 1] fight Zoro, making Berserker Guts considerably stronger than that. Anywho, taking such attacks and surviving involves things like durability (and as you agreeded, Zoro has special durability going above his own power level). Heck, the One Piece's characters in general have a special durability compared to other series', as seen when even ordinary persons could take out Enel's El Thor and survive without any sequels. If anything, is the durability factor that One Piece has blown out of proportion here, not other things like ability to cut through iron, which seems consistent as far as comparing it to others series goes. Therefore, Guts cutting through iron is a far fairer feat to use than arguing One Piece's characters durability, imo.
