The 2012 one. The 90s anime was a rushed adaption of Part 3 that only adapted the major fights. The order to watch them in is:

2012 anime (watch on Kissanime since it's one of the few places to have the unedited version)
Stardust Crusaders (2 seasons)
Diamond is Unbreakable
Thus Spoke Rohan Kishibe (far from essential, but a decent 20 minute time waster)

After that, just read the manga starting from Part 5: Vento Aureo. The anime does cut out a few small plot points that create a few plot holes in the 2012 anime, though they're all pretty minor ones. Aside from Part 7, it's not as if JoJo was ever a series devoid of questionable plot decisions anyway, even in it's better parts like Parts 2 and 4.

That's only season 1, it covers part 1 and 2.

What about part 3 and 4? Would that be in Stardust Crusader and Diamond is Unbreakable?
