Don't you find weird that they'd make a big deal out of the huge monsters that inhabited the island Rayleigh and Luffy were in when Zoro and Sanji could oneshot huge dinossaurs as soon as little garden?

When were they made a big deal of? Rayleigh used them to demonstrate Haki.

Rayleigh made it apparent there were a huge amount of animals on there still stronger than Luffy.

As for the OP, the animals are of a different species to those Sanji and Zoro beat, so that's a pretty big false equivalence. The island was also one chosen by a veteran like Rayleigh for training, so it'd make less sense if the animals upon it weren't different from the norm.

They may be of different species but Luffy emphasized how he had to become huge with G4 to deal with those huge monsters... seems like the emphasis was on the size of those monsters rather than them being a different kind of beast compared to big monsters. Luffy upon seeing Rayleigh dealing with one was also impressed and said in surprise that's impressive how Rayleigh can deal with a monster this huge "without even touching him", so I've my doubts the difficulty implied there only lied on the monsters there being specifically strong rather than monsters that huge being the problem.
