Well The T-3000's phase matter can be scattered with a large enough or powerful blast, so a plasma cannon could do the trick plus she has other weapons.

I don't doubt she has a weapon that can severely injure him. She's just gotta figure out what he is and how to do it before he rips her in half. Though, he did toy a lot with the T-800, so he may give her too much time like an idiot.

He isn't invulnerable he took damage He's made of Phase Matter he just has enough to repair almost instantly.
A plasma cannon has a wide yield so even a few shots can reduce his Phase Matter.
