An explanation for why I have multiple sorceresses is in order I suppose... well, Ultimecia isn't simply the villain we see at the end of the third disk, she had actually made a foothold earlier through Sorceress Edea, Sorceress Rinoa, and then Sorceress Adel. For that reason, Ultimecia's respect thread is actually four separate respect threads combined since she has all the sorceress power from those three as well as every other sorceress in history.
Sorceress Edea
-3:30 Edea casts a spell that forces Quistis to her knees.
-4:28 Edea casts a rather broad spell that freezes the rest of the party in place until she leaves
-4:35 Edea's spell seems to allow her to phase through walls and be transported to a different location. It would also seem she's able to allow others to use this as well.
-0:10 Edea is seen phasing through solid matter like a ghost.
-1:08 Every single resident of Deling City is entirely under her control through a fascination spell as the Ultimania has suggested. Rinoa too seems to be in a state of control, the lone man next to the podium is the president of Galbadia, Edea does the equivalent of force choking the hell out of him, then tossing his body to the side like trash after her speech
-1:29 Edea nonchalantly gives life to inanimate objects
-3:00 The stubborn and not much of a giver of craps (except when he was denied entry into SeeD) Seifer has been taken control of.
-4:25 (This video is done in debug mode so character models not in FMV are not shown, the person supposed to be shown here is Irvine Kinneas, the best sharpshooter in Galbadia Garden, in here he is using a sniper rifle) Stops a bullet in its tracks after it's been fired.
-5:20 A low tier superhuman like Squall is pierced by her blizzara spell and the ground mysteriously is gone. No one knows where it went... like... I don't know if we should count Edea being responsible for that.
-Under Edea's command/control Seifer apparently improved significantly.
-58:40 Rinoa is put into a state reminiscent of a coma due to Edea forcibly passing her powers to Rinoa.

Sorceress Rinoa and Adel (w/ some Ultimecia tidbits)
-25:21 Rinoa after awakening from her coma, is capable of putting a repulsive aura about her that throws people on their asses. A little further and a medical staff comments about Rinoa's strength being unbelievable, so it is either a repulsive aura or Rinoa is flexing some serious physical strength.
-34:38 Adel is just so cool here... She's also in the vacuum of space, without a suit.
-43:13 Ultimecia is full on aware of when someone is also having their consciousness being in the past.
A little background info on Adel, she was the one that lead the Sorceress War, a war that had Esthar pitted against the rest of the world.
Extra
-Is able to cast the Time Compression spell.
-Can junction living beings and siphon their powers into herself. Adel does this to Rinoa.
Sorceress Ultimecia
-Is capable of corrupting energy forms to bend to her will (does this with Tiamat, whom by virtue of his scan info was a former Guardian Force. Guardian Forces who through the tutorial are described as entities of energy that take physical form.)
-Due to the magical nature of Ultimecia's Castle, it naturally births monsters to fight for her. In specific, Krysta, who was born from a cystal in Ultimecia's Castle. (This may actually lend credence to the idea that Ultimecia's Castle was birthed from a spell.)
-Is capable of making living weapons out of beings, the monster in question here is Tri-Point, who was made out of a dragon.
-Speaking of the castle...
Ultimecia is holding that castle up in the clouds through the use of a magic spell.
-This next one is a three-fer, not only is she able to scour your mind, but she is able to take out abstract concepts (In this case the most powerful thing Squall could think of at the time) and give them form, but on top of that, replicate the energy form of the Guardian Force and make it the most powerful. (Griever is capable of one shotting any of your Guardian Force's) So she's able to read your mind, take things from your mind, and create complex energy forms.
-On top of the aforementioned, after you stalemate Griever, Ultimecia decides it's time to junction Griever unto herself. Granting her the powers of Griever.
-As Time Compression finalizes, bringing all points of the past, present, and future into a singularity, Ultimecia warns of the effects of it.
"SeeD......SeeD......SeeD, SeeD, SeeD!! I loathe you...... Why do you disturb a witch so! Why can't I be free?! Your existences shall be added to the algorithm of Time Compression!! In intense pain, your minds shall shred and your memories fade. There will be nothing, and no thoughts of so much as nothing! To such a world I shall send you! You will be able to do nothing...... Well, nothing but revere me, the eternal existence!! Come now, who will be first? Ha, no matter who it is, it will all end the same...... I choose you bastards."
-Finally, we have Ultimecia's Final Form. Which can destroy all of existence and reality.
"I am Ultimecia... Time Shall Compress... All Existence Denied..."
She does this via absorbing the entire universe into her being, this is backed up by her character model, which shows that the universe is a part of her. (Think of something like how Mortadelo looks with his universe disguise.)
Oh, and to get an idea of the kind of magic you can use (these are her magic immunities)
-As stated by the Ultimania and the Tutorial, FF8 Sorceresses cannot die until they pass on their powers to a female host.
I think I've touched all of FF8 Ultimecia's feats, the only other feats are from Dissidia, which is technically non-canon. But for the sake of composite versions. Her feats include.
-Perfectly imitating Cosmos in both appearance and voice.
-By her face-off dialogue with Shantotto, saying that she is stronger than her.
Beware then folks, for if you find yourself not being believed to be true, not currently in true love, not in friendship's tight bonds, and not in favour of fate, you find yourself fighting against Ultimecia in her unadulterated power. One that is not achieved by many...
