Vegeta's durability

Do you guys think Vegeta's durability is generally plot based? I mean, at the Saiyajins saga, he seemed to be the most durable guy ever introducced, withstanding Goku's beatdown, a KMHMH from a Kaioken x4, a Genki-Dama whose power multiplied by 2 could presumably kill Oozaru Vegeta, an Oozaru crushing his entire body with his weight.

But then, against monster Zarbon, a headbutt, some punches and then that final attack (Zarbon throwing Vegeta into the ground) was already enough to let Vegeta in a critical situation, to the point he could barely get off the water.

Freeza stressed his stubborness when he still kept talking having his heart pierced through, but against Cell some simple melee attacks were already enough to knock him out of Super Saiyajin... the same against Super Perfect Cell, in which a simple "punch" (it wasn't exactly a punch, but you know) was already enough to let Vegeta into a so bad state he'd be dead from Cell's blast if Gohan didn't sacrifice his arm to save him.

So, all in all, it seems Vegeta never showed that kinda toughness he did back in the Saiyajins saga, getting down against Zarbon by some simple attacks, even though he still survived a KMHMH whose battle power was even significantly ahead that of Monster Zarbon.

Pretty much. The Saiyan saga toughness was like a one-time thing. Outside of Zarbon, you had Reacoom basically ending the fight with a piledriver, and Freeza ending the fight in a few attacks. Vegeta's mental state was shit there, so that could be a reason why he was KO'ed so easily despite being closer in power to Freeza than Goku was when Freeza decided to power-up. 50% Freeza was over 10x stronger than Goku and still acknowledged his toughness for taking his attacks.

Vegeta got destroyed by Kid Boo, but the Anime does a better job in highlighting his resilience there. Kid Boo was even getting pissed that Vegeta kept getting back up.

Yeah, I definitely agree with you. The anime really took Vegeta's resilience to a new level, similar to the toughness he showed back in the Saiyajins saga. Iirc Kid Boo also seemed frightened when Vegeta got up from one of his attacks all wonded up. It was right after Kid Boo having a laughing crisis if I am not mistaken, to which Vegeta got up asking "what' so funny?".

Yeah, he definitely did look scared when Vegeta got back up. That quickly turned to anger and Vegeta transformed to fight again.

Even though Vegeta was completely outclassed, that was one of my favorite Vegeta moments.

Yeah, that moment seemed pretty cool to me if my memory is serving me right. Vegeta also survived some punches from Kid Boo when he fought him in base later on, but it's possible Kid Boo was just holding back and having fun with Vegeta.

Recoome is one of the better examples of his stamina in my opinion. He got his ass kicked but kept fighting back. Even after the piledriver he still hit recoome in the face with chi blasts.

But yeah it's pretty much how they want the villain or vegeta to look in any given situation. He was the villain in the saiyan saga and they wanted to paint him as this unstoppable force no matter what they hit him with.
