I don't know how to explain it, perhaps this might help.
Colours used to look more washed-our (if that's the phrase I'm looking for) and had more of a serious series (no pun intended) feel to it. Nowadays the colours are all flashy and colourful as if it's gone from serious show to just a Scooby-Doo like Detective series.
The cases have toned-down significantly in-terms of brutality and creepiness. In the early series there were little things that made the episodes more creepy and stuff like if they were showing the killer or whatever in a murder case but still no reveal they make it so that you can see a silhouette with red eyes, like a devil looking to attack the characters or something. The victims in the cases also used to be shown dead in a scarier way, like the eyes used to be open and just scary-looking in-general compared to now where the characters' eyes are always closes. Please look at the video above to see how Detective Conan used to be, as opposed to now. Now you rarely see that anymore definitely not the creepiness I think, but also the brutal murders. Not that I'm saying everything needs to be a brutal murder but this is a mystery series after-all, so showing them helps the story.

These are older posters, or whatever that is, for the series (like 2001 art-style probably still not the are-style from the very beginning, it was starting to change a bit at that point but this is the oldest I could find, I think).
Can you see? The colours are way more vibrant in the newer episodes and colourful. Too vibrant for a mystery series in my opinion.
Also don't really like the change in art-style, much preferred the old style. New stuff looks way too angular for me.
And maybe this is just me, but if I watch the old episodes, I just plain prefer them. The atmosphere used to be 90s/early 00s in the early episodes obviously and that's the time I grew-up in. Not only mystery series but also a bit of slice-of-life (I think you can call it that), so I think you can understand. A bit like a time-capsule l0l, if you want to see an era like mid 90s you can just watch an episode from the very early episodes and if you want to see mid-00s you can just see an episode from that time-frame.. There were no IPhones and stuff in the early episodes. Also used to be able to do more of the cut-off from the rest of the world type stories, because if used to be much harder to contact anyone if the phone-lines were cut or the car-tyres were punctured.
