At the end of the Cell Games Vegeta clearly states that he won't fight again. His rivalry with Goku had always been his motivation for getting stronger, and it was accepted that Goku wouldn't be coming back. So what do you think lit the fire within himself to train and almost reach Cell Games Gohan level after the 7 year gap?

It's weird, saiyans are uncomprehensive, but saiyans also hate to work and he would infinitely prefer that than to work? I don't undertand much, either.

Also, maybe he recovered his saiyan instincts, he probably could have realized that he could reach new heights and he would train as much as possible even if it didn't fulfill the wall he couldn't reach (CG Gohan). But that's within his ADN as a saiyan.

Won't fight again =/= Won't train again

Also, as Trunks started growing up, it was natural for Vegeta to begin training him.

Vegeta clearly wanted to fight again after 7 years though.

Old habits die hard. He was turned off from fighting and training for a while, but at some point he went back to training to be the strongest (stronger than Gohan), because it's where he derives his self-worth from and it's his only hobby.

I do wonder if he was motivated by wanting to protect Bulma and Trunks from potential future threats at all. He never expressed that until he kamikazed, but maybe he would have if Goku getting revived didn't take all his attention and turn him back into a Goku-obsessed loon.

I'd say that despite his initial lack of motivation to fight after the Cell Games, Vegeta's drive was reignited by Gohan's remarkable strength. Gohan, significantly more powerful than Vegeta at that point, imo served as an unintentional benchmark for Vegeta's own aspirations. Even before Goku announced his participation in the tournament, Vegeta had shown willing to compete knowing Gohan would be there. This suggests that Gohan's prowess played a big role in sustaining Vegeta's rigorous training regimen. Vegeta's inherent nature as a warrior, coupled with that, just kept fueled his hard dedication to training, though likely not in a almost mad insane way like to the androids battle. However, it's likely that without the presence of both Goku and Gohan, were the latter to die as well for example, Vegeta's motivation probably would have dwindled significantly as well as his gains alongside the years, and his training would have become imo more of a means to stave off boredom and internal turmoil, rather than a pursuit of a clearly defined goal.
