Which of the current Strawhats couldn't defeat Enies Lobby Lucci?

Honestly, any of them but Usopp and Nami are guaranteed to oneshot him from the feats they've displayed, and Nami's only not a certainty due to the chances of Lucci outspeeding her before she can oneshot him with Thunder Tempo.

Probably all of them tbh. Usopp would die if he got hit but I'm not sure that he would.
