I think a great, logical explanation was that Goku having just drunken the divine water. Potential is something that
can increase with training. But, at that point, thanks to the water, Goku had already accessed all his potential, maybe
even the power he would normally gain merely by growing into adulthood. So he needed to train for some time till
his potential was reset and he could further increase his power.

That's not true. Potential in Z is a fix thing, it doesn't increase.

I think a much better explanation is that they gained more because they had partners rather than training solo like Goku.

Its not a fixed thing. Potential increases with time. Take for example goku. He refused to go in ROSAT for the second time because it wont do him any good and 7 years later he is stronger than cell games gohan.

So potential increases with time

You can break through your limits quite easily though.

Said limits aren't breaken through, rather the characters rise above their limits. Toriyama has cleary acknowledged there are limits to how strong they can become.

The key words this time, “God of Destruction Beerus” and “Super Saiyan God”, were suggestions from the scriptwriter, but they were good ideas for presenting a crisis for the main characters, who had grown so strong that they’d reached a point where there was nothing higher.

In the specific case KyuubiAhri mentioned, Goku didn't simply lifted some tons and broke through said limits, he achieved the upper transformations like SSJ2 and 3 to surpass Gohan. He pretty much reinvented himself in order to become stronger, and then he reached his absolute peak.

Wasn't the divine water just placebo?

That was the Choseisui (Sacred Water in the dub) that Goku drank in preparation for fighting Taopaipai. The Choshinsui (Ultra Divine Water) is what gave him an instant boost to reach Piccolo Daimao's level.

Simple, by plot. It's the same thing with Goku training with King Kai for more than a 100 days and it took him to 8k level at best while Piccolo with 6 days got stronger where he can be stronger than the Ginyu force itself.
