Why Super Boo turn into Pure Boo?

Removing the Kaioshin influence made Boo turn into Pure Boo

And where did the removed Kais' influence go? Did it return to Fat Buu powering him up (which could explain
why he fared well against Kid) or was it just lost to nowhere?

Vegeta removed fat buu from super buu, hence disconnecting the kaioshin influence from the evil part of buu.

Because while both are throwaway designs, Kid Boo is the slightly cooler looking one... probably. There can be a trillion explanations for why the equation of Evil Boo + Good Boo = Super Boo doesn't work the other way around.

So there'd be a final villain that Goku could fight that's not too strong (Super) or too weak (Gray).

In-universe-wise, it's possible that Chibi Boo is basically all of Boo's "evilness" molded into something that was "pure."

Remember, supposedly, Vegeta removed the "Good Boo" from Chibi Boo, and Good Boo likely had some of the Kais' influence in him, so Chibi Boo is basically "Kai-less Boo."

Should he turn into Grey Boo?

Not really...

Kid Buu is the

Kid Buu then absorbs South Kaioshin and becomes

Buu (+ South Kaioshin) absorbs Grand Supreme Kai and becomes Fat Buu.

Fat Buu has South Kaioshin and Grand Kaioshin. But since Buu and Kaioshins don't mix well (one increases his ppowers, the other restricted his powers), the goodness and pureness of Grand Kaioshin is still there so Fat Buu becomes more controllable and gentle and becomes stupid as a little kid that always wants to eat.

It wasn't until the earthling that shot Mr. Satan that pushed Fat Buu over the edge and released all of his anger which became Evil Buu, in my opinion Evil Buu is stronger than Kid Buu because his the evil essence from a stronger being that had South Kaioshin and Grand Kaioshin.

Anyway, Evil Buu absorbs Good Buu and transforms into a new Buu with a better body suited to fight.

Anyway long story short, Mr Buu aka Good Buu was the left over that has South Kaioshin and Grand Kaioshin inside of him, this is why Mr Buu is still very powerful and why Super Evil Buu transformed back into Kid Buu.

Evil Buu easily destroyed Good Buu aka Mr Buu without a sweat = not a single punch or kick landed.

while Mr Buu put up a fight against Kid Buu.
