Say that the series you guys follow weren't released an episode per week, instead they took more time to release the entirety of the volume, making it available online (if there're 10 chapters in a volume, then it'd take up 70 days/10 weeks to be released). Would you like it better?

Probably not. The only weekly manga series I bother following right now is OP. and being caught up to the most recent chapter is a major reason for that. I'd probably drop the series if I had to put up with the abysmal quality of the Wano Arc for more than 1 chapter per week.

Anime-wise, the only ongoing anime I'm bothering with is Vinland Saga, which whilst I'd be fine bingeing, having an episode a week is far more convenient in terms of balancing my time.

Short answer - One chapter/episode a week is far more convenient in terms of most people's daily schedules, and it's not as though most modern series are worth viewing in bulk anyway.

Well, I'd say we'd at least receive what we got with more enthusiasm rather than having to content ourselves with 15-20 pages a week.

I don't know how that'd affect discussions, like in forums or other medias, though. With one chapter a week, it's easier for everyone to be on the same page, while with a whole volume, everyone would read at their own pace.

Absolutely.

I tend to stop reading a series for several months and binge it all at once.

If anything, it'd probably be the opposite. If a volume doesn't live up to people's expectations of it, then they'll just be more disappointed from waiting that long.

It'd probably negatively impact them for that very reason. Hell, discussion is probably one of the major reasons a lot of people on the site still bother with some ongoing series, Dragon Ball Super, for example.
