Budokai - Either Goku due to story mode or Vegeta.
Budokai 2 - Goku or Goten
Budokai 3 - Goku due to story mode, otherwise Pure Boo.
Tenkaichi - True form Freeza
Tenkaichi 2 - Super Vegetto or SS4 Gogeta
Tenkaichi 3 - Pure Boo
Burst Limit - Vegeta or Piccolo
Infinite World - Goku due to story mode, otherwise GT Goku
Raging Blast - SS3 Goku
Raging Blast 2 - Super Gogeta or Super Janemba
Xenoverse 1 & 2 - Custom character
FighterZ - Pure Boo, Hit and Goku Black

This is a good question. I always use a variety of characters, but in BT2 I relied on Scouter Vegeta, since I hadn't unlocked many characters and he was (in my opinion) the best of the ones I had available.

In Tenkaichi Tag Team, I like everything about Gogeta and Vegetto, what with their strong moves and unique animations. Cell and Freeza are also fun to play due to their transformations.
