This is who about do you think would be stronger and how would gaps work, not who would win in a fight (as the result would be similar to SSJ3 Goku vs Kid Buu).

I have Vegeta slightly better.

In my books, the majin charm increased his access to the SSJ2 boost. Base/SSJ Vegeta was the same both pre and post majin.

Fat Boo: 2,500
SSJ3 Vegeta: 2,400

I have it the other way around. Fat Buu is 80% Goku and Vegeta 83%.
