He was dead for like 2 days. Goku went up to Kami's Palace and managed to request for him to revive Shenlong by having Popo tape his "model" back together using superglue before he breathed life back in him.

He also technically dies when piccolo fuses with Kami, Dende makes a new Shenlon modeled after the old.
