If Beerus really wanted to beat Goku as quickly as possible than we know he easily could have, after all even in the anime it's debatable whether ToP MUI Goku really is over Beerus' full power.

He still had to prove strong enough that Goku would believe he was Monaka, who Goku was assuming was the strongest guy Beerus had faced. Regardless of whether or not it was just sparring, Beerus' performance was enough to impress Goku and make him think that he needed more training. Someone far weaker than god level wouldn't impress Goku.

Goku was holding back five transformations, not even counting Kaioken. The guy that supposedly one shotted Hit who can keep up with his Blue x10 Kaioken shouldn't be impressed by him keeping up with his base form.
