I don't think Vegeta was thinking like that. He puts his pride and nobility before his own survival. Trunks wanted to jump in at some point and Vegeta scolded him. I think Trunks told him "but we will die" and he was all like MUH SAIIYAANN PRIDE...

What are you thinking then? I don't understand why Vegeta goes from "Kakarot will die" to "What's he doing?! There's no one who can win!!"

Why does he want Goku to keep fighting instead of himself?

Goku is supposed to go out on his shield like a true Saiyan warrior. Quitting is not in Saiyan vocabulary. Vegeta would probably try to blow up the planet before losing like that. He already tried to commit mass murder/suicide on two occasions when he found out he was outmatched. Hell, what he did to blow up Cell was pretty damn close to that as well. If he doesn't get his way, he doesn't care who wins. What I'm trying to say is, Vegeta is a Muslim.

I concur with the idea of everyone's surprise being directed at the simple fact of Goku giving up. Vegeta already stablished Goku would lose, that is, he knew he had no chance whatsoever if he kept fighting Cell in a hand to hand combat, meaning the surprise didn't come from a power perspective. He was expecting Kakarrot to come up with a sort of plan, he just didn't think the plan consisted on him giving up and summoning Gohan.
