Far below Goku then? She didn't accomplish anything impressive in that battle.

Not really. The fight only indicated that Chi-Chi is much weaker than Goku...which isn't exactly accurate to measure her limits.

Yeah. All we got from the fight was Roshi's reaction implying she was at least above him, though by how much is debatable, considering the "making Goku sweat" feat is clearly inconsistent with Goku VS Tenshinhan. We only get a clear indication of her strength anime-wise with Piccolo's statement implying she's at least above Daimao, though considering it's debatable whether or not Yamcha/Kuririn surpassed him it's best to treat that as non-existent manga-wise.
I pay no mind to the sweating stuff.

She was able to keep with Goku's movements and was visibly pushing him back (even if he wasn't taking the fight that seriously) even matching his casual jumping height... something Nam struggled to do with Goku in the 21st Tenkaichi Budokai. Compared to the massively improved King Chappa who the same Goku defeated with no effort.

The only thing going against this is the ending but people forget this is Goku who got back from 3 years of training with Kami and learn a bunch of new moves. Muten Roshi even said something about him having to strike the air really hard to produce such that shockwave attack.

It's precisely because Goku wasnt taking the fight seriously that it's difficult to pinpoint her strength. The only thing you managed to prove so far was that she was above Nam and King Chappa...things that we already knew, and it doesn't make it any easier, because Tsunade would have defeated them too, with ease.

Even if he was holding back, Chi-Chi still should've struggled to keep up with his movement assuming he was so much stronger at that point. It's a little tricky but it's no way rocket science as it all depends on how you think the improved King Chappa compares to 22nd Tenkaichi Budokai Goku.

It's not like Goku wasn't thinking about the fight as well as trying to figure out why she's mad.

Chi Chi is not terribly far off from Krillen and Yamcha, she's stupidly powerful.
