Old Kaioshin would know about the logistics of transforming with Potara Fusion because the Potara are a product of the Kaioshins.

We can't know for sure how much knowledge he has on the Metamoran Fusion. We know that he knows you must do the dance to perform it, but he could've been told that by Goku. It's possible that the Metamorans invented Fusion after he was already sealed away.

Maybe he just knows how transformations in general work after fusing and is assuming the same applies to Potara.

For real though, I wonder how Old Kaioshin would even know. I find it hard to believe he's seen any Super Saiyans before, let alone Potara-fused Super Saiyans.

Yea that's what I've always said. Who knows. Vegeta did say a Super Saiyan appears every 1,000 years according to the legend (I think?), so maybe millions and millions of years ago, similar has happened.
