I haven't watched 03, although the general opinion on the anime here is that it's overrated crap.

Brotherhood is overrated too, but it's actually good. Watch that.

Thought you already saw or read FMA, man.

Either way, Brotherhood is better. I do think you should try the first one though, if only because Brohood rushes the first bit of the story since it's the same in '03 and Bones expected the viewers to be familiar with it already. So give '03 a shot first, then either finish it or drop it if you start to dislike it. Either way you'll get the beginning part out of the way, and you'll appreciate Brohood more afterwards as well since it's better.

FMA:B is far more accurate to adapting the manga's story, whereas the 2003 series goes it's own route after the first dozen or so episodes due to Arakawa asking the studio to do so. If you want to experience the animated version of the original work, go with the 2009 series from the get go.

2003 had an almost nonsense plot and it was a tad slow paced. It did improve upon some areas like better explaining Edward's vow not to kill (that just was a given in the manga for some reason...), but overall Dante's stupidity was beyond any PIS in the manga and detrimental to the story. That and the anime-only Homunculi like Sloth and Wrath suck. It was also weird how Edward had to accidentally discover how to transmute with a clap, and they liked being too mopey even with gag episodes...

I just reached episode 4 of FMA:B. It's great so far. Also it's pretty sad what Ticker did to his own daughter

The first anime was started when FMA was only at vol 4. So It is normal that almost everything is different.
But It is not bad. Even the author apparently said she liked the way They did It.
