Goku's Kaio-Ken technique can essentially be considered a work-in-progress as opposed to a credible alternative towards defeating Beerus.
Dragonball Super does not seem to be consistent when it comes to how much more superior a high battle should be in comparison to a weaker one. The establish norm doesn't seem to hold any value; at least when we're considering that a specific difference between two fighters will often result in a landslide victory for the higher battle power.
Even if Goku is insurmountably more powerful than Beerus, the transformation would tear his body apart long before it would ever be an effective solution towards defeating Beerus; hence why he has decided to lay off it for a bit, at least until he learns to better control it.
