So it turns out that Dragonball Super has made these levels so far... (In Order of Strength)

That's ALOT different than Battle of Gods where we see a 80% fully powered Goku & 100%. How would this look numerically and with Toriyama's interview regarding their levels? Well, I'll try!

Whiss: 1,500,000
Beerus: 1,000,000 (Full Power)

Goku SSJG: 600,000 (Full Power after Zenkai)

Goku SSJG: 480,000 (Full Power)
Goku SSJG: 320,000 (Powering Up)
Goku SSJG: 200,000 (Initial)

Beerus 10%: 100,000
Vegetto Ssj3: 80,000 (Db Super & Battle of Gods)
Goku (All Power Absorbed): 80,000
Raging Vegeta SSJ2: 75,000

Beerus 1%: 10,000 (Fighting Goku Ssj3)

Yes I think Goku got a Zenkai after he healed. Also the 5 minute time limit doesn't seem to be relevant anymore.

I think it's just that at the rate that his power is continuously rising, he just met the threshold where Beerus' attack didn't effect him anymore. It wasn't a Zenkai, he just grew strong enough to shrug it off. How I'm interpreting this version of the fight compared to the movie version, is that in the movie, the power buff was immediate and he could go 100% right off the bat. In Super, his body is taking its time being able to handle power output, so he's basically growing stronger by the second Broly style.

Super's Beerus vs Goku fight is basically what it'd look like if Broly met someone stronger than him and had that stupid "My power keeps rising" thing going on.

He got shot with a Chi attack and lost the battle. He also had nothing left to give. Than after an ass pulled healing scene he returned stronger than before.

Looks like a Zenkai to me.
