Obviously he'd still have his Saiyan durability, which'd make him be able to take attacks or moves that are way out of his league power-wise without nearly dying or dying, but could he have for example taken a bullet from Bulma like he did at the beginning of the series?

Goku mainly thanked Gohan for his specialty in martial arts all the time in the beginning of the Dragon Ball manga, and Gohan himself was seen in Minus commenting how even though Goku was strong for his age, he lacked the knowledge of martial arts and how it could really come to use for him in the future. So, I doubt Goku would be anywhere near as skilled as he was in the start of the series hadn't it been for Gohan's training.

Roshi also said Goku was naturally stronger than Krillin and housed a primal power, so whether the Saiyans were a concept or just a fleeting thought in Toriyama's head or not, he was always not just your average human. Oolong even postulated after Galu's transformation that this kid could be an alien.
