Would Nappa go back to working like a chump for Freeza or eventually join the Z gang? Would he ever become a Super Saiyan? Probably since everyone else does.

I think he'd eventually become obsolete and then comic relief like Mister Satan.

Just picturing the show without Vegeta makes me want to

Nappa is a dumbass and will continue to work to Freeza until someone kills him because his service is no longer needed.

Nappa wouldn't be tactical enough to oppose Freeza the way Vegeta did unless he were to surrender to the Zet-Senshi on Earth, join them and to suppress and focus his Ki by the time they get to Namek. If he does, things can go well if everyone lays low until Goku arrives. If not, he gets killed pretty quickly, Gohan and Kuririn are killed by Gurd and unless seeing their corpses is enough for Goku to go SSJ upon his arrival, we may as well consider the series over at this point.

Nappa doesn't seem like he could learn to lay low on Namek or anywhere else for that matter. In fact, should that scenario play out like you wrote, I see him being the first one to do something stupid and get caught.

It depends on the way they actually spare Nappa. I'm assuming Vegeta never bothers killing him but is killed during the battle, so on the way back to get the Z Fighters' bodies they find Nappa and decide to spare him because of Goku's appeals. That said, i think he'd join the Z Fighters for a lack of option. Because he got his spine broken by Goku he'd have to stay until the Senzus where on point, so he only lefts with Goku and trains on 100G with him.
Meanwhile on Namek, Kui nevers shows up because Vegeta is dead. Because of that, Gohan and Kuririn wouldn't have any trouble going around Namek and would likely wait on Guru's house and get their potentials unlocked. Freeza would likely want Dodoria to keep going around Namek to find them, so he eventualy finds then and gets killed by Nail.
Because of Zarbon being alive and Freeza likely not being aware of Dodoria's death, i don't think he'd summon the Ginyus, so only regular scum brings the Scouters. They arrive in time with Goku and Nappa, who'd likely have wasted all their Senzus because of being a duo, so they wouldn't need anyway. With the Z Fighters together, they effortlessy kill Zarbon and work together to finish Freeza. I think they would end up killing Freeza on his 2nd form, considering nobody would allow Goku to be stupid and let Freeza power up again.
A year later, King Cold blows up earth. The end.

It's pretty sad how every scenario where Freeza dies on Namek King Cold has no reason to not blow up earth.
