Don’t you think Karin was just caught off-guard & wasn’t able to adjust fast enough? Goku even had to tickle him & couldn’t just take it straight from him.I don't know if Karin is all that. There's conflicting evidence on him.
Goku manages to catch the holy water from Karin and is visibly causing him trouble. If Karin were say 2x stronger than Goku there he would have been untouchable... Of course having to protect the water makes this more difficult, but the point still remains.
On the other hand, post-Tambourine Goku goes to Karin for further training, so Goku clearly thinks a lot of Karin to be asking for his help. But he became powerful enough to surpass Karin himself and render the training useless.
So it depends on how you take these situations. Goku might have just respected Karin as a martial arts master and never had a good grasp on his power given how they never fought head to head.

If you compare Korin vs Goku, you'll see a huge difference in speed compared to Goku vs the Ginyu Force.

Exactly. 1.33x is good here.This looks pretty close as far as pure speed goes. Karin is definitely still far stronger here, but he's at a level where having to protect the water allows Goku to be competitive with him.
Why would he be holding back against Roshi though? Holding back for 3 years? Nah...One could make the argument Korin was holding back since he knew Tao was coming back. His training was still relevant to Tien, who was Goku's equal at the 22nd.

The problem with that is that Goku's level might have surpassed Roshi's for Korin's training. So this directly implies that Korin was the same level against Goku as he was against Roshi.Not against Roshi. Holding back against Goku though since Tao needed to be defeated and time was of the essence.
