Katakuri ought to have greater power by virtue of being a Yonko 2nd-in Command like Marco and is far superior in terms of skill and Haki control from what we've seen. Jozu would have better durability, but that'd be irrelevant against one with Katakuri's fighting style when we've seen how poorly someone as simplistic as Jozu fares against those with more technical fighting styles such ad Doflamingo. Really, there's no reason why Katakuri shouldn't win here.

What did Doflamingo even manage to do? Did he even fight Jozu? I recall him using his strings to stop Jozu from moving but that’s about it.

Idk if it’s fair to use those as points against Jozu. From recollection, he took advantage of Jozu being focused on Crocodile when he tied him up. And I believe Jozu had already fought Aokiji and been frozen when his arm was cut off. I’d have to think that if Jozu was fighting Doflamingo head on, neither of those events would have happened. Someone with the durability to take one of Mihawk’s attacks unscathed, and who was capable of fighting with Admirals should be able to give Katakuri a good fight.

Still, it remains that Jozu's style of combat seems quite the simplistic one with him preferring to rely on raw strength and charging straight at the enemy, something we saw with Boundman Luffy isn't a good way to approach Katakuri. Combine that with Jozu not presenting anywhere near the same mastery of Kenbunshoku Haki as Katakuri, and it doesn't really seem that Jozu's one advantage in durability is best suited for this kind of opponent.

Can that really be said though? Wasn’t Luffy’s durability about the only thing that kept him in the fight with Katakuri? If Katakuri wasn’t able to beat Luffy, whose best accomplishment was beating Doflamingo, I wonder if he’d even be able to damage Jozu. Sure, he has a yuge advantage in Kenbunshoku Haki, but Jozu has a big advantage in Busoshoku imo.

I'd say it's more accurate to say it was Luffy's stamina that kept him in for so long, considering how much his durability would have decreased from the off-guard attack ( :troll2 ) he took. Even removing the general plot armour Luffy seems to have, his durability has been presented as consistently top tier in Part 2 such as him enduring a strike from Big Mom in Gear 3rd better than Queen did. You could say Jozu ought to scale from this, which I wouldn't doubt, though he doesn't quite seem to have Luffy's level of stamina. I will say you're right about Busoshoku Haki being where Jozu shines though, considering we have yet to see Gear 4th Luffy make an Admiral or one on their level bleed after breaking through their defences simultaneously.

I’d probably agree with your assessment that Katakuri should win this fight. I think he’s most certainly the superior fighter, and his future sight is incredibly OP. However Jozu could turn this into a stalemate if he covered his whole body in Diamond :king
