Now that the Shichibukai are being hunted down, what do you think Mihawk will do? What if he joined the Red Hair Pirates? Would that automatically make them the strongest crew in the series?

Depends which way Oda plans to use him for Zoro's progression. If he's indeed Zoro's endgame, he'll most likely be fighting on his own due to wanting a challenge but may be forced to team up with the Red Hair Pirates temporarily. If Oda decides he wants Shiryu to be the end goal for Zoro, then Mihawk will get captured by the Blackbeard Pirates and possibly killed. The route of making Shiryu the final challenge for Zoro would make some sense considering it's been implied as far back as Alabasta that Zoro will cut diamond when going towards surpassing Mihawk, something that could apply to Shiryu if he's stolen Jozu's fruit, though I'd say this route would be a far weaker idea in terms of personal ties between characters.

Didn't Shiryu already eat the Invisible fruit?

Seems odd that the WG wouldn't consider the possibility of Mihawk joining Shanks given their history and friendliness. If the two of them teamed up, alongside Shanks' powerful crew, they'd face little opposition.

He did, though considering the Blackbeard Pirates are specifically targeting DF users, it may be that BB's abilities and that mutation he has may allow him to essentially cycle between fruits of swap them out without the typical ramifications. Might be that Shiryu will decide at some point Jozu's powers are more beneficial to him than invisibility (considering invisibility is kind of useless against Kenbunshoku users). It'd seem odd that the crew would be searching for fruit users for two years when a sizeable amount of the crews top members are fruit users already.

It might be that they accounted for Mihawk's seemingly lone nature and didn't have expectations of him teaming up with anyone. Still ass when not accounting for this at a time where two Yonko teamed up is a huge oversight.

Maybe, but as far as we know only Shiryu, and Catarina Devon have Devil Fruits. Given that we don't know if Blackbeard can consume more, and even Burgess still doesn't have one, it doesn't seem all that strange to me that they are still hunting down fruits. Plus we don't know about Van Auger, Pizarro, Laffitte, San Juan Wolf or Doc Q. None of them could have fruits for all we know.

I'd agree with everything you said other than not knowing about Lafitte. Being able to sprout wings whenever is a pretty telling sign.
