...i want to know whether someone has any good explanation about why Mai is a young
adult in Trunkses timeline. A first guess of mine is that, in that timeline, a while before
Androids showed up, Pilaf's gang somehow found the dragonballs and were accidentally
turned into babies.

Is this part of DBS manga? Is it AT's?

It was drawn by Toyotaro and only a few pages long, so we don't know what involvement Toriyama had with it. It still seems official to the DBS manga (and perhaps the anime by extension since they never elaborate on the whole Mai being young thing).

If Piccolo was dead, there should be no dragonballs. It only makes sense for that to have happened before
the Androids' appearance.

Piccolo had just died in that last panel. Gohan had escaped the androids to go and find the DBs when Shenron was summoned.
