He's simply saying there are tons of other factors.
Yeah, and remember Luffy and Crocodile's second fight. Crocodile sucked Luffy dry of the water and then defeated him once again, despite Luffy having the elemental advantage in that fight, Crocodile was able to turn the tables.

Techniques, Haki power/strengths, physical power.. there are just many things that matter. That's what I see at least.

Not necessarily. Even in DragonBall (which we all know how powers used to rule back in the day) two uber-weak characters in Goku and Piccolo could defeat Raditz, even-though one had to die for it to happen.

Nice point. Pretty well the more versatile you are with your fruit, the more dangerous you will be in a fight.

Well he said you never know how every match will turn out, which matches with what Crocodile said in Alabasta, that you never know how two powers will match out or something like this. If you can't predict it(at least all the time, nobody is going to say Buggy is gonna defeat Sengoku), then it means the powers aren't so linear, no?

Nah, I think Super-Saiyan2 hit the nail on the head. There's multiple factors in a fight in One-Piece, for example a-lot of people think Doflamingo could have won his fight against Luffy if it wasn't for so much interference/help in the fight, but everyone knows Luffy owned Doflamingo with Gear Fourth.
