Along with what Fearless said, it's worth noting Boo likely wasn't going all out in their anime fight. Even after Vegetto knocked his giant Ki ball away with ease, Boo's confidence wasn't shaken in the slightest and said something along the lines of "It'll take more than that to beat me."

Even if Anime Vegito was stronger than Buuhan, it wouldn't have been much considering he had to go SSJ. Then again the manga had him go Super Saiyan so the anime had no choice but to adapt it.

You’re partially correct. Base Vegetto at less than half power was almost Gohan Boo’s equal.
