How come the legend never mentioned the warrior being golden haired?

Well, Vegeta himself said that he thought it was a myth. If there was a Super Saiyan 1000+ years ago, it's not unreasonable to assume a detail such as hair colour might have been forgotten.

For what the reveals in Super provide, Yamoshi's story offers a decent reason as to why future generations wouldn't take his appearance into account with him apparently attaining the SSJ/SSG forms basically for an instant, so not something that too many first hand accounts would've been able to notice, not to mention it seems doubtful the Evil Saiyans would want much info on their greatest enemy spreading (the fact his name isn't even remembered by the time of the Planet Vegeta era supporting this).
