Is it explained in the manga, or anime, as to why Goku even endures the heart virus? How the hell does it only affect him? Is this some Toriyama bullshit?

It's not bullshit that no one around Goku didn't get sick. How often do you get sick just by being near someone else who is?
Out of the people who were the closest to Goku when he was sick, Yamcha (who took Goku home and cared for him) and Chi Chi took the medicine too and Piccolo has a whole different biology. As for Gohan, I guess he took the necessary precautions? He is a scientist/doctor, after all
