To an extent, this also applies for Freeza Arc Saiyans, Trunks and Goten, though I'll treat the U6 Saiyans as the main focus due to them being the ones the following is addressed for:

We learn from Cabba that the Saiyans of his universe evolved to lose their tails somewhat attempting to answer the question of why didn't Vegeta or Gohan's grow back. The problem is what benefit is there to be gained from losing them? Sure, it's easier for U6 Saiyans to become Super Saiyans, yet not by enough that any more than 3 can do it and wouldn't even know how to if not for interacting with another universe. The tail helps them balance in a fight, enough training of it can negate the weakness by enough even a 15 year old Galu could do so and it's not as though becoming Oozaru is a constant risk when a full moon is needed.

So, is there any explanation you can think of as to why the U6 Saiyans thought this to be beneficial, beyond a half-baked attempt to explain a small contrivance?

I don't think there's any good in-universe explanation beyond "AT got peeved by the presence of tails and decided to remove them from future designs."

They evolved so I assume the balance thing wasn't a problem for them. They were born without tails so it's just normal for them unlike Goku.

I assume because the tail'd just be a disturbance. They are righteous in U6 and aren't trying to take-over planets so there is no need to become an Oozaru and defeat everyone (not that they'd want to anyway. They only fight the criminals so what about the good people around would they just be casualties?) like it'd be for U7 Saiyans (since that makes it easier to conquer planets).

Besides the weakness as-well, which can be trained but what's the point? They already seem quite high as is.
