Did he transform into SSJB immediately because he needed to or just to show off? If the former is the case, then we'd have Merged Zamasu and consequently CSSJB Goku having a whooping gap over Vegeta (and Goku?) SSJB.

I think he thought he needed to go all-out to negate Zamasu's immortality. Even SSJ3 Vegetto would win in a straight up fight imo.

Why wouldn't SSJ3 be able to negate MZ's immortality?

Because its much weaker than SSJB, so Vegetto might not have thought it was a big enough gap to negate Zamasu's regen.

Do you think Vegetto thought that blowing up Merged Zamasu would have killed him? I think in the anime Trunks did mention something like blowing up Zamasu would have outright killed him even if he were an immortal, although I don't remember something like this being ever stated in the manga, with Goku stating he'd make Zamasu tire out by constantly beating up him being the closest thing regarding the way to deal with an immortal being.

Beerus doesn't seem weaker than Vegetto by any significant amount and he confirmed he can't kill immortals so at best that would've made Zamasu take longer than usual to recover imo.

Because SSjinB has turned into their fighting form with SSjin. It's not a matter of needing it.

He figured it'd be necessary to overcome MZ's regen, implying the lower forms weren't strong enough. I think he could be stronger in God form, but not enough to win.

He wanted to make sure not a single trace of Zamasu was left to regenerate, so it stands to reason he'd use the greatest output of power he could to do so. Stomping Zamasu with one of his regular SSJ forms wouldn't be enough if he could still regenerate from everything Vegetto dished out.
In other words, it was for the overkill.

Yeah. Vegetto was definitely hoping to vaporize MZ with overwhelming power.

Goku thought he could kill Merged Zamasu by using Destruction, so yes, I would say Vegetto can probably beat the crap out of MZ with a far weaker version of SS, possibly as low as 2, but he chose to use Blue to overkill it because he thought he'd be able to make the gap cancel out the immortality.

Which isn't necessarily wrong, it's just that the power necessary to break immortality had a Zeno level prerequisite to pull off.
