Which reviving would you cancel out if you had to choose one? And how does it impact the story?

Can't be an unnamed character and can't be Cargo. Can't be after Kid Buu destroys Earth.

Roshi's death from his failed attempt to Mafuba Daimao. He stops fighting and has absolutely no relevance for the rest of the franchise (not counting Super).

Would probably let Goku stay dead after Cell so Gohan and some other characters can step into the spotlight. Goku can then just pop in and out every ten episodes for a cameo or even come back to life later on, but I'd keep him out for at least 1 arc. Also, I'd make sure Gohan wasn't a cuck.

Where would the characters meet rendezvous if not at Kamé House? And who would provide the emotional support and words of wisdom during the fight with Nappa and Vegeta?

Oolong, Puar and Turtle can handle the house. Popo and Korrin could also provide a place and more wisdom since they’ve both been around longer than Roshi.

I second Roshi in the Piccolo Daimao arc. Roshi was acting like an alpha in the Piccolo Daimao arc. Toriyama should have let him go out while at his best.

Going on a bold one and saying Vegeta after the Freeza Saga. He’d made such a huge impact already.

I used to think he should die too. It would be way more tragic if he finally opened his heart a little, only to die (pretty common anime death trope nowadays, but still powerful and probably realistic, since people tend to have epiphanies near death).

It would fuck up the story so much. No Trunks, so most likely everyone gets killed by the Androids in the future and then in the main timeline again, unless Future Gohan goes about things differently without Trunks there, survives and is the one to warn the main timeline and provide heart medicine instead of Trunks. Still, Piccolo would have to step up against Android 19 and then 20, which could be too much, especially because I think he'd be weaker since he might not train as hard while Goku's in space, since there'd be no threat or competition from Vegeta. Goku and Gohan would go into the rosat first instead of Vegeta/Trunks and probably Gohan (either one, but especially Future Gohan) would finish off Semi-Perfect Cell, unlike Vegeta.
