Your enjoyment of Super if everyone was in character

Let's say that all the major plot points in the Super manga remain the same, but the characters are written as they were in the original manga (mainly Goku and Vegeta). Would that make the subpar generic plot lines in Super more bearable to you?

Personally I think it would put Super on a level above GT, and possibly by a lot.

I'm mostly already happy with Vegeta.

I would have Vegeta not agree to work with Freeza/kill Freeza's stupid fucking laughing naked ass and Goku probably wouldn't be so happy about wiping out entire universes so for me to fix the characters it would be hard not to significantly change the plot.

My enjoyment would definitely go up, but only if the idiotic decisions made in the plot (the Senzu Moro situation among many others) were replaced with smart decisions in tandem. Would probably be a better product than GT as you said, although to get to that point I would also just have all the half-Saiyans attain SSJG through the ritual so they can keep up without plot induced bullshit boosts akin to #17 and ToP Gohan.

The problem with this scenario is that so much of the plot is only possible for characters acting out of character. The fight with Zamasu was only able to go into round 2 due to Goku's intelligence being nerfed to the point he forgot about the Zen-Oh button until the end and the Moro Arc would've ended on New Namek if Vegeta was as competent as his Z self. That said, it'd require heavy rewriting to not have the plot driven by character stupidity, and that alone wouldn't account for all the constant plot holes and poor retcons separate from character inconsistency, nor the poor writing of new characters.
Best case scenario, it becomes more or less on GT's level, though I doubt I'd enjoy it more when GT is an entry I like for its ideas and some design choices a lot more than Super's best premises despite being objectively bad.
