I only really consider Toriyama canon, so the movies at least have some canon in them, especially RoF, but the Daiz, outside the Toriyama interviews, are 100% non-canon to me. I dunno about Super, as far as I've heard Toriyama has nothing to do with it, but then sometime he does, and it's all really confusing to me.

The Daizenshuu's author is Toriyama though, or at least he's credited as the author.

That's because he's the author of the original story where a lot of the information from Daiz comes from. Toriyama makes in clear in his introduction comments that the Daiz itself is not his work.

Toriyama's stamp of approval doesn't mean much to me. He approved of the anime. Toriyama doesn't care about canon or any of that, he just wants people to be entertained by his products. He'll allow video games, guide books and all the like to be made, not because he thinks they'll be used in online debates but because they'll entertain people.

It doesn't matter where the major fuck-ups happened. You could write a perfectly consistent fanfiction and it wouldn't be canon. When a single universe is given to the hands of multiple people they'll all have different ideas about how the universe should be. This is why you got shit in the anime like the fake story of the Dragon Ball's creation, or Dr Frappe. The Dragon Ball universe was envisioned by one man and only one man, so even if he's not consistent himself, as far as I'm concerned he's the only one who gets the final say in what is or is not "canon".

I don't think Toriyama has ever said what is or is not canon.

He hasn't. The closest he's come to anything remotely "canon" is mentioning GT as a "side story."
