Who is stronger? Fat Boo went from a level that SSJ2 Gohan might be able to beat to a level that SSJ2 Goku and Vegeta could beat if they worked together. Are they around the same level?

No idea. Good Boo has absolutely nothing going for him other than being way less than 50% of Fat Boo. How strong even is peak Fat Boo?

Gohan can easily defeat Buu
Chapter: 461 (DBZ 267), P3.5-7
Context: after Kaioshin says they must run from Boo
Gohan: “…Is that so?...He really does have tremendous ki, but…It doesn’t seem like so much so that there’s nothing I can do…[ ] …If I can only put out all of my true power…”

This doesn't sound like it would be easy to me.

Vegeta says they could only manage something against Dabura.

Gohan is thinking his Cg level.
Battle Damaged Vegeta >> Majin Buu, Gohan is def better than that Vegeta by a good margin

I thought it was strange how Kaioshin survived against Boo far better than Gohan did.

You guys are looking too much into it. It's not a powerscaling feat. It's just Buu and Babidi toying with Kaioshin.

I remember in the english dub Shin tries to talk his way out and awkwardly "Remember me, Boo?" after he tanks his Kiai. Always thought Boo recognized Shin and treated him as a playmate because of it.

Oh? I'll actually take a look at it then.

Why toy with Kaioshin and not the others?
I have to look at GreatSaiyamans' example because it might be the case if true.

My assumption would be that Buu followed Babidi's orders and beat Kaioshin to the brink of death so Babidi could watch him suffer.

I think Good Boo would win just off of having better fighting expertise from his back to back battles with Vegeta, Goku, Evil Boo and then Kid Boo. Goku said he absorbed the opponent's techniques from very brief fights, and the Boo we're talking about here (early Fat Boo) hadn't spent much time fighting since he was freed from his shell.

I think Evil Buu and Kid Buu are really close if not equals.
I mean, why would Vegeta make fun of one Buu, while giving respect twice to the other one and acknowledging his power if they actually were equals?

Chapter: 507 (DBZ 313), P7.3-6
Context: Vegeta grabs Boo's pod and wonder what will happens if he pulls it out
Vegeta: "This'll be fun...Will you turn back into this fatso? Or will you become that scrawny guy? ...Either way, it seems that your power will doubtlessly fall below what is it now."

Chapter: 510 (DBZ 316), P12.6
Vegeta: "The truth is that you were right [that I'd be killed by Boo]. That Boo is stronger than I imagined...And so are you, Kakarot..."

Chapter: 511 (DBZ 317), P8.2
Context: as pure Boo beats up on Vegeta
Vegeta: "Wh-what fast and heavy attacks...! ...Kakarot was...fighting with a gu-guy like this...?!"
