Chimchar since Infernape ends up having the best coverage for a playthrough with it stomping about half of the significant trainers. Even leaving out its usefulness, Infernape's also my favourite design of the three due to the Sun Wukong elements of it. The shine that Ash's Chimchar/Monferno/Infernape got in the Sinnoh anime also helped boost its appeal.

I think the Piplup line looks the best.
