The anime is the only medium that AT is in majority control of, the manga, not at all. The manga follows the anime and adds/changes their own things to it. This is old news, so no need for me to post a long drawn out explanation.
Toei adds a few things in the anime here and there, but Toriyama is still in majority control. He says what goes and what doesn't in the end. Basically the exact opposite of the original 13 movies and such. So it is still canon where as the manga is not and is headed by someone else.
I personally don't consider Super to be canon to Z and the original series, but as far as Super itself goes, the anime is canon over the manga and by all technicalities, the super anime is a canon continuation of Z, but too many contradictions and retcons and shit make me not personally see it as that.
Like, as far as Z Buu arc goes, base Saiyajins > Freeza, that is pretty clear cut..... But in Super.. .... Yeeeah....
