Haven't read the chapter yet but maybe his King of Hell attacks aren't always AdvCoC? He wasn't aware he had the ability when he was fighting Kaido so maybe he was doing it subconsciously?

He's not doing it consciously. He didn't know what he was doing when he unleashed Enma against Kaido and King.

At least it's been confirmed that Zoro was using it all along. The writing feels odd to me though. Zoro seemed to be using it at all times since Wano, now he suddenly has no idea what he's doing.

To be fair when Kaido told him he was using it he was clueless. He didn't know you were able to coat it like CoA.

No, this tracks with how it's been happening since Wano. He doesn't consciously use it during Wano, it just happened when he used Asura and when he finished the fight with King. He's been said to have been using it on Elbaf by Luffy, and it's clear that he used it when he fought the domi revers giants, but not against summers here.
