Sanji's monstrous defense

Look at it like this. Sanji now has Germa enhancements that gives him a permanent iron body, which even had fodder think it was CoA. Well Sanji can now further enhance his newfound durability with CoA, boosting it much further still. To top it all off, his Raid suit already acts as defensive armor that negates damage.

At this point, it's hard to see him not having a comparable durability to Big Mom right now even if it's likely not the case. What exactly can hurt him?

I can't see him taking more than a couple at this point in time. Even if he does overcome Queen, it clearly isn't by a lot at the current moment. Kaido and Big Mom are so far above that.
