Thoughts on Qui Gon?

Like almost every character in The Phantom Menace, Qui-Gon had so little personality it's hard to even call him a character. In the film, he has nothing to really have his personality appear much different than the other prequel exclusive Jedi beyond one line exposited by Obi-Wan about his opinions often conflicting with the Council's.

Legends improves this by going into far more detail about his character. Here we learn that he was pretty close to the grey Jedi ideology with him ignoring or defying the teachings of the council and acting purely upon the will of the Force, as well as having many challenges to his beliefs and methods such as the fall of his first apprentice Xanatos to the Dark Side.

Legends EU as due to it's vastness and not being primarily fuelled by political agendas of the writers like Disney's SJW elements in the new canon. The Thrawn Trilogy, Darth Plagueis novel and Knights of the Old Republic works easily outrank anything from the post-Disney canon. There are many things in the Disney canon that are better than their Legends counterparts though. For instance, cyborg Darth Maul's story in Season 5 of The Clone Wars, the Son of Dathomir comic and Seasons 2 and 3 of Rebels are far better than the zero-development filled original idea from Legends which was just worthless fanservice, plus Ahsoka Tano is one of the most well developed characters in the franchise.

I've read the first three (four if separating both parts of A Storm of Swords into different books) and will catch up when I can be bothered to buy the rest, though there does seem to be a drop in consistent quality with books four and five (though at least nowhere near as much as the show).
