Vegetto believes he could have negated Merged Zamasu's immortality if he blew him away with an all-out attack, while Beerus says he cant kill immortals period. What do you think of this?

Vegetto is only noted to have surpassed Beerus while charging up the Final Kamehameha too. He was just being hopeful that you could destroy an immortal with overwhelming power.

Well, even if Blue Vegetto is above Beerus he still can't win. Not if his fusion lasts for 30 seconds.

Well yeah. That's what the author is trying to convey his message here. Beerus is a Hakaishin therefore he knows what his power is capable of and the limit of an immortality. Vegito on the other hand was just hoping to his power to be enough to kill Zamasu. It's a shitty writing compare to the anime where Merged Zamasu's body was falling because of not being fully immortal and all they need to do is more power to destroy him aka Vegito.

I have Vegetto above Beerus, as there was no new statement about the latter's power even after Shin witnessed his full strength (implying that he had an accurate idea...somehow), which leaves his statement on Vegetto > Beerus uncontradicted. In addition, it fits well with Whis stating that Goku and Vegeta could give trouble to Beerus if they were to work together.

However, between Beerus' incomplete Ultra Instinct and Vegetto's very short time limit, he wouldn't win against him.
