So what’s up with their reactions? In the dialogue they specifically talk about Freeza taking off his jacket, but Kuririn and Gohan are terrified. Vegeta also instantly loses his cool when the real transformation starts.

Piccolo, Gohan and Kuririn don't need to be that powerful. Vegeta was probably thinking about Gohan getting a potential rage boost when he said the three of them can beat Freeza.

Also why would the humans get that strong on Kaio's planet when even Goku didn't make those kind of gains in a year?

Goku only trained for 5 months, he spent 6 months in the Snake Road and the Saiyans came more than a month early.

Krillin and Gohan were already lacking shouki and yuuki, it's doubtful that they were viewing the situation objectively. Vegeta clearly wasn't impressed, and nobody made note of an increase in Ki.

I don't recall if his "first" transformation of just blowing off his armor was in the manga or if it was filler, but back in the day I assumed when he powered up and blew away the armor he went to a full 530,000. Before that I assumed he was at around half that and that's all he was able to suppress to.

So around 250-260k

Vegeta wouldn't laugh off him breaking his armor if he just did a 2x jump in power. That act did exist in the manga but he didn't grow a couple inches taller from it or appear to power up like in the anime.

If it were a power up, I'd make it a 1.2x at most, similar to Piccolo's.

Vegeta always has something stupid to say about a villain's transformation. He even laughed at Perfect Cell for being smaller than his last form despite being a total manlet himself

Vegeta allows his ego to not let him pay attention just like the villains usually do, so Vegeta wouldn't even be paying attention to what Freezas power was after that display.

He wouldn't just go and not notice a 2x increase in power, that's as stupid as not noticing Freeza's seconds later jump from 530K to 1mil. Even Semi Cell noticed Vegeta's power jump when he went Grade 2 despite the jump being nowhere near 2x. Logically Freeza removed the armor for the same reason that he would probably remove his panties if he were to transform to his 4th form and didn't want to waste a perfectly good pair
