I don't mean what you love, but the series which defined anime for the last decade. The type of stuff non-anime fans would be encouraged to start with even years after later. The kind of series you might even see on mainstream TV and I don't mean kids' channels. The series you'd recommend to someone who's not even wanting to watch anime. The 90s had Cowboy Bebop and maybe Neon Genesis. The 2000s had Death Note. There aren't many series that fit the criteria. Some that are slightly harder to get into for new anime fans might be FMAB, DBZ and Inuyasha.

What contemporary series have the stature of those above or meet the criteria above, since 2010? Attack on Titan I think would be one, since it's very popular amongst non-anime fans.

I personally wouldn't say it'd be that accurate for a series only a decade old or less to be called a classic, considering the term has more connotations with age every bit as much as quality and renown. As for decade-defining, however, there's clearly quite a few. Shingeki no Kyojin, as said in the OP, was one of the most popular of the past decade to the extent of making the medium more accessible to newcomers as an entry series. Including new adaptions of older series, JoJo's Bizarre Adventure would definitely be up there with how much larger the fanbase became after it finally got a coherent adaption that made it far more recognisable and influenced several animation styles that included giving a completely obscure studio its own identity. Hunter X Hunter 2011 should also be mentioned if including new adaptions for covering most of the manga at a greater pace than most other Shonen adaptions and provided more credit to the sub-genre of this demographic with the series breaking several trends compared to most Shonen (though it'd be inaccurate to say it doesn't go against every formula). Steins;Gate and One Punch Man were also popular enough to be worth mentioning, though again, only if including adaptions of series older than the 2010s since the visual novel of the former came out in 2009 and the latter is a grey area due to the webcomic it was based on also debuting in 2009.

I would widely consider Kaichou Wa Maid-Sama as romantic classic, Definitely one of my favorite romances,

What's not to adore about a love tale between two great individuals with sides that complement one other so well?

The tale, at least what was covered in the anime, seemed a bit missing, but the manga, on the other hand, is a really nice read, absolutely my favorite Shoujo, that completes the story and offers this Super Couple a very desired conclusion.

I would agree that Attack On Titan would be one of them, as well as Fairy Tail.
