It's shown Zoro can use Haoshoku... but where's is it said he can embed his attacks with it like Luffy? King only said Zoro used Haoshoku...

It's shown by the black lightning used in nearly every attack.

An explanation on how he figured out he could do that would be great. He didn’t even know he had it.

He explained it as fully releasing all of his Haki at once, or something to that effect.

Luffy's clash with Doflamingo has a very similar effect visually and they didn't coat their attacks with Haoshoku.

Nah, the difference is that Haki is emitted after the attack strikes. Advanced Haoshoku is coated to the weapon or body prior to attacking which is why you see black lighting streaming from Zoro's swords. He used regular Haoshoku against Kaido when he used Asura and there was no lightning.

What's up with his attack vs Kaido then? Kaido wondered if he's a Haoshoku user too and he had no idea what Kaido was talking about. What's up with that usage? Just normal, 1st level Haoshoku? Like Luffy vs Doflamingo? Kinda lost.

Asura is the manifestation of regular Haoshoku Haki. Advanced Haoshoku is intentionally coating yourself with that Haki. Asura isn't using coating, it's just the result of his overpowering spirit.

Kaku hinted to it the first time it was used. He said it felt like Zoro turned into a demonic beast or something like that.

And how else could he transform into a demon without Haki? The fact that Kaku mentioned his aura is why it makes sense. Haoshoku is all about your own willpower and imposing it on your enemy. Asura is the culmination of all of Zoro's willpower projected through Haoshoku Haki, which Kaido immediately took note of. It's no different than Kaku noticing the aura of that attack being different from the rest.
